Apple Pie (Diary Free, Gluten Free, Low Sugar)

Ingredients

Homemade Crust:
1 1/2 cup of Oat Flour (grind up rolled oats)
1/2 cup, cold Olive Oil Butter
1/2 teaspoon of Salt
2-3 tablespoon, ice water
Oat flour to dust surface to roll out dough
Plastic Wrap
Pie Pan

1. Blend flour, salt, and butter with a pastry blender of fork. (you want mixture to be pea-sized crumbles)
2. Slowly add ice water by tablespoons. You can mix with hands or fork.
3. Set plastic wrap down with flour evenly across the surface
4. Once dough starts to form a smooth ball, put on floured surface. Knead folding over itself 4-5 times to create layers.
5. Roll out dough to a large circle.
6. Flip dough into pie pan


Filling:

8 Granny Smith Apples (Cored & Sliced)
1/2 cup Olive Oil Butter
3 tablespoons of Oat Flour (grind up rolled oats)
1/3 cup of Agave
1/2 cup of Splenda Brown Sugar
1 teaspoon of Cinnamon
A few dashes of Nutmeg
1 tablespoon of pure vanilla

1. Melt butter in sauce pan.
2. Stir in flour to form a paste.
3.Add agave and brown sugar; bring to a boil.
4.Add cinnamon, nutmeg, and vanilla.
5.Reduce temperature, and simmer 5 minutes.

Meanwhile..

1. Place crust in your pan.
2. Fill with apples, mounded slightly.
3. Gently Pour sauce over the mounded apples (leave 1/4 cup)
4. Place flattened crust over top.
5. With a  fork or hand press the edges together.
6. Cut slits on the top of crust.
7. Pour remainder sauce on top.
8. Bake 15 minutes at 425 degrees F.
9. Reduce the temperature to 350 degrees F, and continue baking for 35-45 minutes.

Raspberry Oatmeal Bars (Dairy & Gluten Free, Low-Sugar)

1/2 cup light brown sugar
1 cup oat flour (or ground up rolled oats)
1/4 tsp. baking soda
1/8 tsp. salt
1 cup rolled oats
1/2 cup softened butter (diary free optional)
3/4 cup of seedless sugar-free raspberry jam

1.Preheat oven to 350 degrees. Grease one 8 inch square pan, and line with greased foil.

2. Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of mixture into the bottom of the prepared pan. Spread the jam on top within 1/4 inch of the edge.

3. Bake for 35-40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.
